Apple Chutney

I had a glut of apples from my trees this year, too many to eat so I made this chutney which will come in useful over the coming winter months. It also makes for a nice homemade Christmas gift!

4lbs chopped apples

2lbs chopped onions

1 pint white vinegar

2lbs xylitol (tooth friendly, blood sugar friendly, ph friendly) or brown sugar

2 or 3 generous tsp cinnamon powder

2 tsp curry powder

A little lemon juice & zest

Pink himalayan salt & black pepper

Mix all together in a heavy based saucepan. Bring to the boil then simmer slowly for 1 -2 hours until it looks like chutney consistency. Put into sterilised jars, (I save these during the year for the winter) put a circle of greaseproof paper on top and seal. Store in a cool dark place and allow to mature for a few weeks. Goes well with cheeses, meat, pies, quiches & sandwiches.chutney
